The Lost Canuck Finds The Perfect Picanha At Hagberg’s!

On a brisk evening, the cold air did little to deter Todd Seigel, known to many as The Lost Canuck, from firing up his smoker to prepare one of Hagberg’s Meats’ most sought-after cuts – our picanha. With a passion for barbecue and a knack for technique, Todd showcased a reverse sear method that transformed this flavorful cut into a tender, juicy masterpiece.

While some may still be unfamiliar with picanha, it has become a staple among Hagberg’s regulars. Also known as the sirloin cap, this cut is prized for its signature fat cap and exceptional marbling, delivering a rich, beef-forward flavor that stands out on any table.

Preparation is simple. Hagberg’s Meats takes pride in offering expertly trimmed picanha, making it easy for customers to achieve professional-level results at home. A quick five-minute prep is all it takes to get started. Lightly scoring the fat cap, without cutting too deeply, allows the seasoning to penetrate the meat more effectively. For an added boost of flavor and adhesion, a thin layer of beef tallow can be applied before seasoning.

Todd recommends a dry brine to elevate the final result. After seasoning, the picanha is left uncovered in the refrigerator for about eight hours. This straightforward step allows the spices to work their way into the meat, enhancing both flavor and tenderness.

The cooking process begins low and slow. Setting the smoker to 250°F, the picanha is gently brought up to temperature, allowing the rich marbling to render and the flavors to develop. Once the internal temperature approaches 138–140°F, the meat reaches a perfect medium doneness – succulent, tender, and full of flavor. To finish, Todd employs a high-heat sear at 600°F on a flattop, locking in juices and creating a beautifully caramelized crust in just 30 seconds per side.
